Most all-around inflatable paddle boards need just one fin: a single center fin in the middle of the tail. Some boards use a three-fin, or 2+1, setup with two smaller side fins added, but for flatwater cruising and everyday paddling, one center fin is all you need to keep the board tracking straight.
The center fin does almost all the work. It stops the tail from sliding sideways with each stroke, so the board holds a line instead of zigzagging. Take the fin off entirely and a paddle board becomes very hard to steer, spinning off course every time you paddle. That single fin is the difference between gliding forward and fighting the board.
Side fins are a different job. On a 2+1 setup, the two small outer fins mostly add bite and control when a board is turned hard or ridden in surf, which is why you see them on surf-style SUPs. For the calm lakes, bays, and slow rivers where most people paddle, they add very little, and plenty of excellent all-around boards skip them completely.
